Go-To Summer Lemon Vinaigrette
One of my favorite finds from the Pearl Street Farmers Market is Bjorn’s Lemon Honey—local, delicious, and perfect in this refreshing vinaigrette. I first made it after sampling at the farmers market, and even my husband (who doesn’t usually like lemon) was all in. It’s now a staple during the summer months.
This vinaigrette is bright, tangy, and just sweet enough. The local honey not only adds great flavor, but it's also a natural way to support immunity and seasonal allergies. Bonus: it’s super easy to make.
Ingredients:
¼ cup lemon juice
1 garlic clove, grated
1 tsp Dijon mustard
¼ tsp sea salt
Fresh ground black pepper
½ tsp Bjorn’s Lemon Honey
⅓ cup avocado oil
½ tsp thyme (fresh or dried)
Directions:
In a small jar, mix garlic, mustard, salt, pepper, and honey.
Slowly whisk in the oil until combined.
Add thyme, shake well, and refrigerate the rest.
Use it on:
Salads
Roasted or grilled veggies
Grain bowls
