Recipe of the Month- May

Gochujang noodles

Makes 4 servings 

2/3 cup coconut aminos 

6 tablespoons Gochujang sauce

1/2 cup peanut butter

6 tablespoons tomato sauce

6 tablespoons coconut sugar

6 tablespoons sesame oil

4 cloves garlic

½-1 cup water (to thin the sauce to desired consistency)

4 Servings of Ramen Noodles

2 tablespoons avocado oil 

1 lb ground chicken

½ teaspoon salt

½ teaspoon pepper

Cilantro finely chopped

Chives finely chopped 

In a blender add all of the sauce ingredients and blend until smooth. Set aside.

Add avocado oil to a skillet over medium heat. Once the pan is hot add the ground chicken and cook until browned and cooked through.

Bring a large pot of water to a boil. Boil the noodles until softened. Drain and add them to the chicken. Pour sauce over the noodles and the chicken bring to a simmer. Divide into 4 ramen bowls and add herbs. Serve warm.
